Leather strops are the final step some sharpeners use to remove the last microscopic burr and polish the edge. A strop loaded with a fine compound can bring a knife from sharp to very sharp. - Pressing too hard. Heavy pressure creates a large, wobbly burr and can gouge stones. Use light, controlled pressure.
